Can someone guide me through the Maw?

Not exactly a new player, but I havent played since BFA

So I was doing Shadowlands (catching up on old expansions before Midnight) on a lowish character, around 35 and I had done a few zones then I got to the Maw and ran into a quest that had a lvl 56 mob to kill, so I just used my lvl boost to get to 80 but then all the quests vanished out of my log. I am pretty sure i chose a covenant but cant remember which one.

I didnt think anything of it and moved on to Dragonflight but I now want to farm SoD for Sylvanas’ bow but I cant get to it as when I enter the Beastwarrens I get feared and there is a closed gate.

Can someone point me to the right path to unlock that area so I can do some raid farming?

Finding which Covenant should be easy. Check your maps for flight points. As I recall, if you have joined a Covenant, you have a flight point in its headquarters. Of just go to the room in Oribos with the recruiters and ask around.

To open The Maw, you need to find and follow the necessary quests to get to the opening questline.

An addon like BTWQuests should guide you where to pick up the trail.
