It was my understanding that uncollected items that are no longer available such as removed with patch items do not show up in the transmog tab in game.
This is the case for everything except for the boosted gear you get from lvl 80, the Valiant, Zealous and Ebonsoul pieces appear in my paladin’s transmog tab even though you cannot boost to lvl 80 anymore only lvl 85.
Is this intended or an oversight?

All those appearances are still available from other items that are still obtainable in the game. Pretty much every part of the Ebonsoul set has a variants that drops from random mobs in Northrend, awared from varoius quests in Northrend and crafted with Wrath Profession. Valiant and Zealous have all items that are still available from Wrath content also.
Some do, some don’t. For example the Valiant Breastplate only shares with the Valiant Chestguard, both lvl 80 boosted items and both no longer available
Edit: Should mention this is on classic wow, not sure if retail added new shared xmogs later on for these items
