The Eredar did even worse then the Orcs actually. They COMMANDED the whole Legion to torch countless worlds. In any case, the orcs are worse than the Man’ari Eredar. The Man’ari were turned into demons. After breaking their ties with the Legion, the orcs continued to commit atrocious acts, unlike the “penitents.”
The orcs did not cause more destruction because they lost the war, but Nerzhul was already preparing more portals to invade multiple worlds. They just failed at it.

And later we se those that didn’t go willingly besieged by the full might of the Army of Light. That kinda ruins the illusion of a free choice when your options are: “Join us from your free will”, “We’ll convert you by force” and “We’ll kill you”.

Not really. He couldn’t go back to Draenor because that world was dead. He couldn’t go back to Stormwind cuz the alliance would come after them when Lothar gathered a big enough army to get back at the Orcs. One way or another war was the only option here. Which is an issue that is brought up in Chronicles too.

Orgrimm should have stopped the siege, surrendered Guldan, and made peace with Stormwind.
Stormwind no longer had enough troops to face the Horde alone.
Lothar would have rallied the other human nations to get Varian back on the throne. It was a Lose Lose situation no matter how you twist it.
That’s pure speculation. Stormwind at that point was just trying to survive. If Orgrimm had offered them peace, they would surely have accepted.
The other nations didn’t become interested in the war until Stormwind fell, so I doubt they would declare war on the orcs if they had made peace with SW.

Locked in an alien World with next to no way out with Draenor at the time being a barren dying rock (the whole biodiversity was added during TBC because obviously an endless wasteland would make for a poor expansion). What else would you suggest? Not exactly helped by the fact that even if he himself was not affected the Majority of Orcs were. The haze of demon’s corruption didn’t lift until AFTER the Second War and the orcs were numerous. So it’s not atrocity they committed after freeing themselves off the Legion’s influence. So how you secure your people’s future and don’t get yourself killed by them? The diplomacy was out. The first war burned all the bridges.
As for Amani and Quel’dorei… Yeah as much as I love Elves the Amani still had every right to hate them. Especially with both races having surprisingly long lifespan.

There were options beyond continuing the war, but Orgrimm did not consider them.
It was none of the orcs’ business, and yet they decided to join the extermination attempt because it benefited them to have the Amani’s help.
Yeah I’m sure men of Stormwind would just give it the thumbs up and let the Giant Green Aliens that killed their king and numerous soldiers settle somewhere near if they just apologized.
By the same logic we use Humans should have decided to pack up and leave Amani Lands as soon as they realized that trolls lived there. Yet they didn’t resulting in a war once human tribes managed to stop killing one another for a moment.
And what else would they have done? They didn’t have the strength left to threaten the horde, which vastly outnumbered them.
Humans have lived in Arathi and part of Tirisfal for as long as they were humans.

Humans united against the trolls due to the hostility of the Amani incited by the Zandalari.
