So what is the stuff I should keep on my jounrey of my first play-thru in a dozen years?
So far I put all gems in my stash and all legendaries which I didn’t use any more.
Unused white, blue and yellow items went to the merch.
Anything else i should keep besides gems or legendaries? Or can the latter also be merched?

I saw you posting earlier on the us forum. This is the eu forum where there isn’t much activity (but still some great people answering). You are free to post anywhere for sure but there will be much more activity in the us forum.

I’m aware of maxroll. But either they don’t have a “d3 for newbies” guide or I missed it. ATM I don’t need a “guide” that throws around acronyms I don’t know (yet). I last played over 12 years ago and whatever I knew back then is gone with the wind.

The general discussion forum will be the most active. You could also check the class specific forums, but there likely won’t be much activity there anymore (like there was years ago).
I can’t see your profile so I can’t see your heroes or builds. The build guides on Maxroll will give you an idea of what items one could strive to get for the different sets for a class and for the different activities there are in the game. Nothing is carved in stone and there is always room for doing things differently, but some items and skills etc. can be extremely crucial and make or break a hero… also the “correct” rolls and affixes on items can be very important.
You can also get lots of info on youtube by searching something like: diablo 3 demon hunter guide or demon hunter gear of dreadlands build (or another hero and set build). Just be aware if the video is outdated or has info specific to a certain season theme (like if it is based on a season theme with ethereal weapons, or soul shards or something different).

Just to be clear, when you said “went to the merch”, I hope you don’t mean you’re selling white / blue / yellow items to an NPC for gold. You should be going to the Blacksmith, and salvaging them into crafting materials, that you’ll need later, e.g. the Mystic needs these materials to enchant items, you’ll need them for using some of Kanai’s Cube recipes, etc.
