This is abject presumptuous nonsense:

My brand new monster PC will run, at max settings, without rebooting: Cities 2, JWE, JWE2, RDR2, CYBERPUNK, Forza, as well a AI software, Stable Diffusion, Premier, literally everything.

The only thing that makes it randomly reboot is diablo 4.

Fix it.

Try to fix your side first. The game is very demanding on max settings.
Maybe your PSU can’t handle it -check if it runs hot or if the fan becomes very noisy.
Check the temps during the game. Use HWiNFO64.
What monster PC is it about and what PSU do you have?

Are you getting any error codes from Windows (BSOD)?
