First off: I don’t mind if someone likes their cards to look different, with a gold rim, moving artwork, or any other cool effects - but I do mind when I can’t recognize the cards being played, nor easily read the effects of what they do in game.
The standard Hearthstone cards are well designed, easy to read, and easily recognizable once you’ve got used to them. The signature cards do not live up to the same level of design at all. I find them annoying to read, as their effects are not printed on the card itself, and while the alternative artwork may be nice I do not appreciate the additional effort needed to recognize what they are and what they do.
For these reasons I won’t play any signature cards myself, both for my own sake and in respecting my opponent, but I’d really want to see an easy way to turn off certain graphics that has no real effect on the game itself, such as making all cards appear in standard format, rather than their upgraded versions.

i had same issue when i returned to the game. but after couple games i could find out, a mouseover over the played singture cards will be displaying a gray box/box’s saying what the card does /has.

you will get used to it after a while.
on a tablet/iPad. you get to click and hold the signature card to see its texts.
about why they are in the game, well the game is over 10 years old and many HS collectors do have most golden versions of the important cards. so adding something new in the game for them will keep their wallet intact. now giving other players the option to disable them it will raise the question why collect them in first place if they can be disabled?
Unfortunately looks like there is no way to simply turn them off based on my own fiddling with the settings. Though what Romman said is true.
Signatures annoy me too. I wish I could turn off opponents signature cards and make them display original versions. Almost everything I dislike about hearthstone currently is cosmetic or animation based, like BGs faster animations should be the standard from the start of every combat so I am not incentivized alt F4 and reload (especially against undead).
So much more control on how the game looks and plays should be given to players but at the same time I understand why Blizzard does not care about players like me who would never spend a dime on their game.
As for what Romman said, if I turned them off there is no reason why it could not display the signature version for you, that way you would have no idea if I saw the original or signature.
The option is there for Arena, please bring it to standard.
