I wouldn’t recommend Goblins as the go-to for someone new to WoW RP. Their way of talking is slang-rich and accented, they have cartel and trade prince lore to deal with, and jumping right into them runs the risk of making the whole thing seem like a horrid Jewish stereotype*
*Which fortunately Blizz has slightly eased up on
In my opinion, the safest picks are Orcs, Tauren, and Dracthyr. Dracthyr in particular, if the race appeals, are easy to start with because we barely know more OOC than they know IC, and everything a new player doesn’t know is justified in being asked IC.
Most Orc characters are in the age where they’ve been born on Azeroth and can still be feasibly played as “hmm fighting good. honor good. respect other warrior.”
As for Tauren, their druidic and shamanistic ways are a little deep to get into, but the only pitfalls of their lore are Grimtotem and their pre-Mulgore days. Both Orcs and Tauren go great with warrior and hunter.

Humans might seem boring, but they are so easy to RP with and they do indeed have some great lore.
You could play a Stormwind Paladin or a Warrior from Lordaeron who was a refugee.
If you wanted to play an elf, then I do think that a Void (High Elf-looking) Hunter is the best and easiest option. Close relations to the Alliance and to Humans, with decent lore that is quite easy to understand.
In all honesty? Just don’t think about it too much. Dip your toes into whatever you like the core fantasy of. Sure some races and classes are harder to rp but you will learn and people on this realm usually are more than happy to help you.
To add to this in case anyone new sees it: Void elves are one of the hardest races to RP while high elves are one of the easier ones + people don’t really RP the “void elf but looks like high elf” stuff. I definitely wouldn’t suggest RPing an actual void elf, rather using the customization to RP a high elf.
For the most part if you just read the intro quests in whatever starting zone you pick to play through, you’ll end up with a good enough understanding of what kind of character you chose.
The race specific starting zone is good for some basic lore about your race and the newer shared one is good for generalized attitudes and mannerisms of the races/classes and faction pride.

The hardest character to RP is a character you’re not into. If you like a character they’re a lot easier to RP than forcing yourself to RP something because you think they’d be ‘easier’.
