Dk eyes don’t glow based on which type of magic they’re using, so different eye color options would make no sense.
What about the eyes of some death knights during legion, newly raised ones, don’t some of them have different colors and looks? Also since we now we will have 4th gen dk’s, maybe they would be able to have new colors which could fit the new lore.

Utilisation or empowerment by death magic (particularly the runic kind) seems to grant the bearer glowing pale blue eyes. See: Bwonsamdi, Gorak Tul, OG LK.
Death Knights only use runic death magic. Through this they command powers over plague, frost, blood etc, but all of these things are manifestations of death magic, they’re not different in the way fel magic is different to void magic.
Therefore in lore DKs should all have the same eye glow.
Two outliers exist, the belf in Acherus. She’s the only one so this feels like an oversight or just a way to make them stand out.
Bolvar. Bolvar had orange eyes because fundementally he is “undead” because of red dragon flame, so the helm never had the opportunity to “undeadify” him like it did to Arthas over time. So his base eye glow is always orange. However we see when he juices up, his eyes go the characteristic blue.
I believe you get to raise Whitemane, and she gets different eyes and some markings.
That’s probably because they didn’t bother to give her new eyes. Nazgrim and Trollbane both had the undead skin and the glowing eyes.
Some dark runic tattoos would be nice. They could then be different colors, dark purple, blue, green, red etc.
Being a hero class they do need something else to make them different from all the other.
