I like the bike (both on Ally and Horde) , the Sandstone Drake (because you turn into a dragon!) and the Thundering Ruby Cloud Serpent with the lightening effect. Spent around 150k gold to get these three over the last couple of months.
My favourite to get was the Priestess’ Moonsaber because I farmed the currency relentlessly and only saw one other in the game before I got mine.
My warlock uses that ‘classic’ simple horse on non flight areas; my dks often use class-land-mount. And so on. Many players seek what is rare, and many players go with what they find cool regardless how common that mount might be.
Likewise my paladins are quite fond on paladin class mounts - both land and air! And I see so many hunters use their legion flyer - even on ground, so safe to presume that hunters also do not mind what is rare or not, but they enjoy thematic ride!
I think my characters each have their own personality and I often pick them mounts matching those small characteristics they have. I might be odd one out like that - having this RP approach on all my characters or something
I don’t think you’re the odd one out. It’s sort of how I approach things with my alts too.
My DK’s all ride either the DK mount or the Headless Horseman’s mount (I prefer it to the bony skeleton mount). My Rogues all use the Legion Rogue flying mount or a racial mount for ground only,
I try to keep to racial mounts where possible, unless I think they look especially stupid. Like the giant Blood Elf chicken mount or the can’t fit through any door or archway Draenei mounts.

I also like racial mounts here there. My worgen even runs wild because this what she’d do. She is feral in her wolf form ! And when she flies I always go human form because I think her ‘mount’ would be scared of her feral form!
I do not mind elekks, but had to swap them out because I got stuck on places. I often look into two factors - race and then the class. My human dk is not like my elven dk; and my dwarf hunter is nothing like my elves. Only my paladins all look very alike - blood elf, dwaarf, LF draenei, they all are true to their class fantasy. Either racial paladin mount or class mount from legion. Or I see my warlocks - unded or human, or nightborne - simple fel casters too stuck into their magical endeavours - hence the simple felsteed for ground and the legion horse for flight. prior legion they used ICC achievement mount.
I agree with that blood elf mount, this is one racial mount i never felt home at. So my blood elves originally in TBC got undead or orc racial mounts for use.
