I know it’s a really small thing but some of the new hair options (okay all of them) are somewhat disappointing. I’d like more of a variation. But the colors are nice.
Oh, and also more feature options. Like a peeled back half skull or something.
Overall, I’m not overwhelmed by the forsaken customization features that have been added, unlike some of the other races (like Nelves). I’m just whelmed.
You are absolutely right, and you are not the only one.
They could do some more rotten options for sure.

I’m totally in support of a full Skellington option.
Another option I’d like for Undead - I don’t know if it would be a racial customization or maybe a unique piece of armor transmog, but we see Undead in WarCraft occasionally sporting the weapons that killed them still jutting out of them!
Thinks like an arrow in the eye socket, an axe embedded in the skull, and of course a sword through the torso would be absolutely badass.
Like the full-Skellington idea, it doesn’t “quite” fit with the Forsaken, but if you let Trolls play what are essentially Forest Trolls and Sand Trolls, I don’t see any reason why Forsaken can’t look more Scourgey.
