From still the obtainable ones, I would like to put my hands on Jaina’s… mount and timewalking dragon. And from not obtainable the Grove Warden, the moose mount, it has such a good druid/shaman vibe, pretty simple but looks awesome with a lot of tiny details. I am really sad that I didn’t play when it was available.
The last two I really wanted were the Big Love Rocket and the Vicious War Trike.
Got both of those somewhat recently, so now I’m good until they add some more whacky mounts.
632 unique mounts here, and the one I want and have always wanted the most, I don’t have. 
Ofcourse talking about the Swift Zulian Tiger. Currently in the proccess of farming that gold cap to just buy it on the BMAH some day.
2nd most wanted for me, was actually Shackled Ur’zul, and I actually finally got it last reset, after a whooping 414 attempts

You mean Midnight? Was extremely glad when I got that for my DK, use it in blood specialization.

The damn blazing drake from dragon souls. One of the longest raid to farm as bosses are pretty much events rather than fights, and the only one i need for the drakes achievement.

This one isn’t so bad, you can walk straight to the boss and no nasty mechanics. Only minor issue is the five minutes of RP during the fight.
The mount I want is the Blazing Drake for the Awake the Drakes Achieve. I have all the others for that Achieve and I have the other mount that Deathwing drops.
Whilst not the worst raid to run (not doing SoO anymore, hope).
The RP on top of Wyrmrest and the faff of the spine dance are a pain.
Yes, saw it drop the first night of Kara release for the Tank, never saw it ever since.
