Adding that for Horde, Silvermoon is a solid RP hotspot.
The RP tends to take place (and draw in any walk-ups) especially around the Farstrider Square, where multiple large guilds are stationed. Furthermore there’s often activity in Court of the Sun, Murder Row, the Silvermoon City Inn, and the western part of the Royal Exchange.

A good chunk of guilds have increasingly started hosting cross-guild events and unlisted campaigns (especially military guilds are keen on this, for obvious reasons). They are often created along the axis of IC race or a shared goal of some kind. I’d definitely recommend following through with your search – join a guild like that, and you get access to these events, which otherwise you wouldn’t hear about.
Finally, while I’m not convinced of the notion that most RP takes place on discord nowadays, discord is nevertheless an active and useful OOC platform to be kept in the loop about various RP initiatives.
