I killed the rare (blue) Harvester for the Trophy Hunting achievement but didn’t registered. The screenshot with the kill: https://imgur.com/a/WmPL0n0

Rare monsters are yellow… not blue.
You killed a Champion.

Also, don’t forget to check your chat “toast” for killing the Champion (Blue) packs if you’re also doing that achievement, as there may be a mob that’s not been aggroed from the pack hidden in a corner.
Always good to remember Yellow is Rare (same for items!) and Blue is Champions (Magic for items). There’s been a few posts recently confusing the two.
