Having made a new bnet account more times than I can remember, I can safely state these are the main things I miss when I start again:

Transmog/vendor mount The transmog isn’t so bad to begin with as you have nothing to transmog to, just need it to remove your hat or cloak visibility. The vendor part is essential, I run out of space far too quickly otherwise.

Slow flying Unfortunately you have to do the DF quest to unlock the mounts to unlock slow flying. I need to hover! And sometimes I just feel too sick going zooooom!

Hearthstones travelling back to Org/SW to go anywhere else can be a right pain if you aren’t a mage and you don’t have the flight paths unlocked.
And an honorable mention to my AH/Mail dino, whilst not essential he certainly makes my life a lot easier.

Omg this ! More pets, more pet battle content and outside of these little critters, more big pets for classes ! More elementals for shaman, more void / light summons for priests ! More demons for warlocks, more undead for death knights !

Immersion.
Sometimes I speed up - and sequential completionism never gets old - but recently I like the style of playing slow and smelling the roses. Similar to how old WoW used to play technically.
For example, walking up to that waterfall and just sitting down for a minute.
