I am a simple man
Doré-mi jalepeno infused (haloumi cheese) I like it grilled and skewered with some sauteed fiddleheads ferns.
Trappist cheese. Really. It has the structure of a really soft, fresh cheese but the taste of an aged cheese.
I also really enjoy the kind with cumin, also brie and port salut are nice, and nettle cheese (garlicy flavour but without the stink!)
