What exactly have your people done to earn the name Highborne?
You got changed into a skinny mana crazed version of your former selves. You hide behind a bubble, while the night elves fought the Legion.
You have the worst customization of any elf.
I dunno, I think Veressa was just added in the Lore to give Sylvanas and Alleria a normal counterpart. She has no character of her own and she basically has no personality outside of being a relative to someone else (wife to Rhonin or youngest sister to her otherwise more well known sisters).

The people who turned into Naga were the Highborne/supporters of Azshara. Not the Night Elves. Night Elves like Tyrande and Malfurion fought bravely against the legion and kept ownership of vast lands like: Ashenvale, Feralas, Stonetalon mountain, Hyjal, Darkshore, Etc. That is until the Horde started attacking them recently
Highborne aka Quel’dorei title were given to the Royal and Noble Nightelves, the Highborne never were a race, it is just a title which made them think they are superior to other low class citizens.
Nightborne still consider themselves as the Quel’dorei.
Proofs are in Suramar, the Shal’dorei guards will scream “Lowborn scum”, “Scum like you should obey their Betters” and etc.
Even the groups from Island Expendions, where each race represents some culture, the Nightborne are tagged as the Highborne.

The skinny creatures you are referring to are the withered, Nightfallen, not a Nightborne.
Technically we are also Nightelves, we did not hide under the bubble, we protected the Temple of Elune, which the legion wanted to use to open second portal for summoning the Sargeras.
Ashamane, the wild god, the hero of the War of the Acients herself sacrificed herself to give us time to make the arcane shield.
Fun fact, the Shal’dorei did not even knew that there is a world out there l, outside of their shield.
If you will interact with the Shal’dorei kids playing in Suramar, they say “outside world is doom”.

Highborne of Moonguard, were under command of Illidan, they bravely fought the legion along side the Kal’dorei resistance.
Guess what? After the sundering those two “heroes” you have mentioned just forgot about them.
They even exiled those Highborne to the Eastern Kingdoms, where with the power of the Sunwell your kin was created.
My analysis: she’s quite hot but wears too much armor.
