I have been playing on my Rogue of late and have enjoyed it which is strange as i have found them a little hard in the past. I was wondering which Horde race apart from Forsaken would a rogue fit into as i am thinking of maybe starting to RP on it during Shadowlands.

You can make anything work, really - more depends on the type of character you want to play.
The most obvious choice is probably a goblin, but there’s the modern Shattered Hand for orcs, the idea of a Thalassian spy, etc.
Of course, the best rogue race is obviously the tauren, since tauren rogues are so stealthy you can’t even see them.

I’ll list some basic concepts with each race:
Orc/Mag’har: Shattered Hand agent/clansmen, some Marauder (laughing skull) or just a dual wielding Orc.
Troll: Shadow Hunter, Berserker.
Tauren: 
Undead: Deathstalker, Shadow wielder + many fallen concepts of a Human like Pirate.
Blood Elf: A Ranger sort or an agent of spire.
Goblin: Thief or pirate!
Pandaren: Shado Pan Wu kao comes to my mind, as well as Ninja-esque Shadowdancers.
Nightborne: Some arcanic Spellblade who stealths with Arcane magic.
Zandalari: Some Jani follower. Sweats at Zag’Kush.
Vulpera:…Pirate?

Zandalari could always show Shera Ali’kh, ancient assassin order (unfortunately) not mentioned since vanilla. Maybe investigating threats to the Empire or acting for storylines. We also see the Warscouts of Pandaria. Similar to Warbringers with relics of power.

I don’t see why not, I believe some Saurids were shown to even spit venom or something along the lines. Maybe you can use a saurid as your own eyes too.
