I’ve decided to main a mage and am currently leveling her. Which professions would be best to have?
I’m thinking either tailoring/enchant or alch/herb. Or would you recommend something else entirely?
At endgame I use engineering for the battle res and extra teleports, and alchemy for the extra hour on flasks.
Enchanting seems worthless (for gold) at max and I’m too lazy to actually go gardening. Tailoring is probably ok though for passive goldmaking.

I personally would recommend Alchemy and Engineering.
Alchemy because it boosts the duration of your flasks, which helps you save on having to use so many flasks, plus you can also make your own.
Engineering because of the extra utility they have in dungeons, and even in raids. You can have a mailbox for yourself (WOTLK engineering), bank access (WOTLK engineering), a 50% chance out of combat res on a 10 minute CD (WoD engineering), and battle res from SL engineering (works really well if your group is wiping in dungeons, since you can just use invisibility to drop threat, and then res the healer, saving the group a lot of walking time.)
You can also get some extra gadgets that can be really useful. You have access to belt enchants, which so far work across expansions, so if you need an additional CC you can have your belt have a knockback on it, or a fear effect, both on 10 minute CD. If that isn’t required you can install an on-use, small absorbtion shield on the belt, or if you really want to go oldschool, you can put an enchant on your belt that gives you a temporary speed boost.
If your aim is goldmaking for professions I would say consider tailoring (for the bags) and possibly enchanting. Enchanting makes an okay amount of gold, but not near the end of the expansion. Older enchants can sometimes fetch a decent sum of gold, double so during the times the mage tower is up.
