Best selling mats on mid level right now

I realized that the selling prices for different mats are quite different, e.g. Thistles for more than 1g each vs. other herbs on the same level with less than 1s each. I want to slowly start making money now that i can afford my mount on 40. are there any good mid level mats (especially herbs and leather) which are selling well that i can keep an eye open for them during levelling?

Wool is always good it has a decent price, people level past it quickly and are thus often short of it for their professions.

Herbs should be rising in price as they bought to level alchemy alts for TBC.
