My 5 eurocents.
I have 6 tanks max level, geared up, I do raid clear every reset = twice per week.
Monk tank is most satisfying of them all to tank.
No huge spikes of damage, and that damage I get delays with stagger, I can just clear as if nothing happened.
More useful and funniest feature of them all is DK’s Deathgrip, so useful almost irreplaceable in Undermine raid with all those run-through and disengage trash!
I even do L8 delves with Brewmeister.
And I even queue for LFR tanking after I got the loot rolls, just to tank for fun and hone my skills.
Personal preferences, I guess.

To be fair - honestly - why would you pug m+ as tank if Tou can get mythic transmogs extremely easy as tank in dvelves.

I dont see even a single reason to Play this season as tank exceot maybe to super fast get KSM and portals once you get 665 itlv from chilling in dvelves - then you can push score in 1 weekend and be done after.

Not worth famring mythic gear because next season blizz will reset itlv again .

Brewmaster is very fun imo. Not sure how DK is fun though. It feels slow and sluggy in comparison.

brewmaster has become a blood dk with all the self healing yoyo. Fundamentally flawed concept, they should be the slow but consistent dmg intake tank but that is not the case.
they generally dont stand out as something special, combined with the overall low popularity of monks, there are not many around

Absolutely, you nailed it. Back in the day (MOP), BRM had the lowest health and limited self-healing, but it still held up beautifully and was a joy to play. On top of that, tanks in earlier expansions like MOP felt truly distinct—each had unique strengths and weaknesses that defined their playstyle. Nowadays, they all blend together, leaning heavily on high self-heals to survive, a stark contrast to the diverse tank designs of the past.
