Yup, you absolutely can do that.
I once manipulated the price of some cooking ingredient from costing an average of mere coppers on all realms, up to costing several gold on my realm. Got myself a WoW token out of it lol

You will be competing against plenty of slimeballs though, who post low to trick people and then relist at half the price something is worth. Frustrating as hell
