Since warlock can summon them are their souls on the dh diet ? If so wouldn’t it result in void based ability ? Havoc seems to have some like Darkness or Blurr and they also have a lot of “purple” stuff, I had read somewhere that the dh tattoos color were influenced by which demon soul they absorbed so could it be that the purple one are gained for having nom nomed a Blueberry ?
in that book were they covered illidan and his hunters they explain that each hunter eats/merges with the demon they hate the most. the dude in the book got a fellhunter so i guess you could eat a blueberry or even a sucubus or imp. tho i think stuff like doomlord or shivara are way to powerful to ever be dominated like that.
Yeah that’s what I thought aswell but voidwalkers are in a particular spot among other demons since they are more void than fel but still technically demons in game.
Where did you read that the color if the tattoos is connected with the demons they have absorbed? You know that it are arcane tattoos, right?
A Demon Hunter should be able to absorb the soul of any demon in theory, provided they are able to handle the power.
Then again, the bigger issue here is the general confusion regarding the separation of void and fel.
Originally in the Warcraft series, void creatures were essentially just a sub-section of demons and fel. It is not until more recent lore developments that the void has become its own separate and unique thing that is different from demons and fel.
If you go with the earlier lore, I see absolutely no issue with a demon hunter consuming the demonic soul of a Voidwalker. But if you go with the newer lore, then it will become a bit more iffy.
Given that Voidwalkers have been classified as demons in WoW’s lore for so long, it should be possible. Granted, a demon hunter that consumed the soul of a voidwalker might spark a discussion as to whether void creatures are considered demons or nor.
And I’d not use what a Warlock can summon as a shorthand for a demon hunter’s diet, as Warlocks also summon your fellow raid members as well.

Yeah but they Don’t enslave those, most of the time.
The answer should be no since voidwalkers are not in fact demons as they are voidspawn and only serve as such by game mechanics as warlock pets.

Pretty much this.
They use the void for that, not the fel. Point taken though. 
demons are actualy a realy wierd word to use in wow, becuse technicaly not all of the legions members are demons at all, though in game they are, the only real demonic race was the nazerhim, and then came more like the Shivarra hom actualy aint demons at all, neighter are the pit lords sort of, imps are demons though, but then again the infernals aint demons at all they are fel elementals sort of. Archimonde and Kil´jaden where not demons eighter.
