It seems like Warriors and Hunters are the obvious choice, and some suggested Shamans - but Shamans weren’t originally available for Dwarves, so what’s the story behind that? And in general, what other classes fit according to the lore and thematically?
idk much about how dwarves became shamans, but other classes that fit tematically would me monks, especially Brewmasters since dwarves are your friendly drunk neightbours, and they make one of the best brews in azeroth!
Well… Dwarven Shamanism is basically very logical. They were living stone, essentially aspects/part of the Azeroth itself, in a way as Earthen, then the Curse of Flesh turned them while they slumbered and most of the mawoke as flesh and blood “mortals”, but the “Stone is still in them” so to speak. They were made from the very crust of Azeroth herself who - in a sense - gave birth to the elementals.
Primarily, dwarven shaman are going to be of the Wildhammer clan. Though all dwarves have a deep connection to nature, it is the Wildhammers themselves who have furthered this bond to the closest one can get without becoming a druid. Wildhammers are sons and daughters of earth and sky, as home on the ground as they are in the air, and it was only natural for them to travel down the eventual path of the shaman.
While this is not to say that an Ironforge or Dark Iron dwarf could not practice shamanism, it is something neither of these clans have really put their minds to. The Bronzebeard dwarves are obsessed with their Titan heritage to concern themselves with the elements.
Magni turned to diamond, so it might be feasible for some of the Ironforge dwarves to try their hand to shamanism to find a way to communicate with him. Of course he is “better now”, but there was a period when he was a diamond statue
Similarly, for the Dark Irons, they would rather command than ask, and in general a Dark Iron prefers the unnatural routes of magic and only rarely delves into other routes (Priest, Paladin). Though they have gated elementals into our world, it was through Dark Iron magi and warlocks and not Dark Iron shaman.
But since they are “good” now… maybe some of them would try to make a connection to the Elements, to redeem themeselves
The classes that were added in Cataclysm are from the other dwarf clans (or taught by them I guess, at least initially). Wildmmers have shamans while dark irons have mages and warlocks.
Right before cata Magni turned into stone, so the clans created the council of the three hammers with representatives of all three clans due to a dispute over the throne, because Magni’s daughter Moira married and had a child with the leader of the dark iron dwarves, who were previously enemies of Ironforge.
Originally shamans were not a part, cause we were playing “ironforge” dwarves. Shamans were introduced in cata, that “wildhammer” dwarves joined the alliance in lore.
If the races and classes were to be implemented properly, Wildhammer Dwarves should have been added as an own race under the Dwarf category just like we see Dark Iron Dwarves today, and both sure have a long tradition of working with the elements - as opposed to the Bronzebeard Dwarves in Ironforge.
Edit. Contemplating whether to make a human warrior (viking in a way) and a Dwarf Paladin, or the other way around, but I don’t really see a paladin as a viking
Dwarvish religion naturally tends toward the Mystery of the Titans (hence Hall of Mysteries in Ironforge)
Personally I’d make all Dwarf paladin a follower of Tyr or Aggramar, thus combining Titan-lore and Light-worship.
I think the dwarves who believe in the Light belives it because of Humans
They were the second race to have Paladins after humans. And seeing as how long a dwarf lives you could roleplay one as a member of the original Knights of the Silver Hand.
Titan-worship and Light-worship aren’t mutually exclusive tho’
The Order of the Silver Hand name and symbol having been taken from the Legend of the Silver Hand, legacy of the Keeper Tyr, as a symbol of those Light-wielding warriors who placed self-sacrifice above all else, although the silver hand was already a common symbol for the human tribes of Tirisfal many centuries ago, appearing on clothing and pendants, worn to ward away evil spirits, to protect warriors in battle and to cure diseases

Since the Humans of Stormwind and Dwarves of Ironforge have been hanging out in the same Alliance for so long, some proficient Dwarves found their place among the ranks of the Human Paladins and thus the Dwarven Paladins became a thing.
If you only want the consider an appropriate race for those three mentioned classes…
That’s appropriate.
Don’t be afraid to consider Dwarf Shaman, unless your Dwarf storywise is a Bronzebeard of Ironforge.
I would be far more inclined to have a Human Warrior - just look at the Alliance cinematics. Although any race can be a Warrior, we do most often see them as Humans fighting in front.
If you want no more than one char of each race in this combination, then my pick would be:
Warrior - Human
Paladin - Dwarf (or Draenei)
Shaman - Draenei (or Dwarf)
Since you allows the other races to have two classes, it should be obvious that:
Gnome - Mage/Warlock
This have been the staple of the Gnomish race since vanilla.
All classes fit to dwarves perfectly fine. I’m serious, even mage. In the end it just depends on your own fantasy, because in the lore you can easily make sense of any combination. If you need to feel like the classic dwarf, then sure go warrior, paladin or hunter, but why ask in the forum, if you already know lol
