You can farm the same armor type and it will be unlocked for each of that armor wielders, for example: you can farm leather items on druid and you will have them for rogue, or monk. There are still class restrictions though, so you cannot run with T6 Paladin set on your DK etc.
I remember almost completing a shaman set from The Sunwell, there was only 1 item my shammy had to get himself.
Thats rare, though, imo. Only had that situation once. Tiers are class restricted

I have done a lot of mog runs on my druid and I have several pieces of rogue and monk parts to actuall sets unlocked.
The way it works (as I understood) is there are pretty much several pieces that can unlock the mog look.
For example one is always class restricted so you could as a druid get a chest piece that only Monk can equipp, that will not unlock the look. Then there is another chestpiece that drops that looks the same, has no class restriction and can unlock the set piece mog.
So yes you can indeed unlock mogs for other classes sets that share same gear type as the one it dropped for IF they dont have the class restriction.
The ones that drop in form of token are always restricted but the ones dropping as they are dont always have that.
Remember, there are pieces with similar looks to sets that drop as normal boss items that could be used by every armor class
