My level 81 Beast Mastery Human Hunter is about to fly the Skyfire Gyrocopter to dispose of some Garrosh’ar Horde. When I climb in the Gyrocopter, though, I get nothing on the action bar to do some damage with. What have I missed, please?

Loss of vehicle bar is a common problem when using bar changing interface addons. The bar will need configured in your addon, and your addon will need to be up to date.
For a “quick fix”

please exit wow then go to your World of Warcraft install directory, open the retail folder, and rename the WTF, Cache, and Interface folders to WTF_old, Cache_old, and Interface_old.

Log in, do the quest.

Exit the game again, and put your folders back as they were to regain your old settings.
