Is it MM Hunter/Arcane Mage because of their High Elf connection, or is it Sub Rogue/Shadow Priest/Affliction Warlock because of their voidiness?

You can mix void elf heritage armor with a lot of warlock transmog pieces for some cool mogs.
Personally i think the VE heritage armor looks amazing on a monk
Mine went Warlock with a Voidie. Some decent purple transmogs available too.
Void elf mage, priest, warlock, hunter all look cool. Death knight or warrior not so much.
Mine is a hunter because she couldn’t be a paladin, it’s probably more fitting of a caster class though.

Can You somehow define what does “coolest” mean to You in this context? Best looking? Most lore accurate? Biggest RP backstory potential? Class that benefits most from VE racials?
It’s hard to answer without being more specific.

I’m looking forward to void elf’s being paladins. I plan to use the racial to teleport into the next pack and freak pug healers. That will be cool.
