Which covenant shall I pick for Monk healer?
Good question. Im not even sure I know what MWs have been playing xD
I think necrolord maybe? Although Im not 100% sure haha! If its PvP you could try using check.pvp.fr and see what other MWs are using. If its for mythics you could check the ladders xD

Kyrian could also be a decent choice for them RP wise, all about that discipline.
So yeah one of those 
Kyrian is your best choice by most guides. Boring, but a strong cooldown.

Google is your friend
Kyrian has the edge as a throughput CD, but it’s horrendously boring. It’s very good for raids.
Necro isn’t too far behind, and probably better for M+ due to frequent use which gives it flexibility.
Nightfae is difficult to get maximum use out of due to the targeting, but it’s probably the best pick if you want maximum DPS as a Fistweaver. It’s also good healing if you get frequent uses in M+ but noms your mana due to this.
Venthyr is easiest to use alongside Kyrian but performance wise it’s worst if the other Cov skills are used properly and maximally, due to the AI of the monks delaying the effect you want.
Raids: Kyrian
M+: Necrolord or NF
M+ Fist DPS Focus: NF
For pvp, necrolord.

Covenant Choice
To note all covenants are very close in terms of throughput but recommend Necrolords for raiding and Kyrian for mythic plus.
Soulbinds
For Kyrian you’d want to go Kleia.
For Necrolords you’d want to go Emeni.
