Hi, this is my first time posting anything on the forums so I hope that i did it right.
I have a question about covenants. For example, what happens to all my gear/mounts/pets etc. that i’ve unlocked at one covenant when I decide to switch to another? Do I lose it?

Yes, you did it right. 
Unfortunately, I don’t know a general answer to such a general question.
Blizzard have changed the effects when changing covenant at least once during Beta, so I’m not sure how they all are now and whether they may change again.
If you look at what the Night Fae Quartermaster sells, for example,
you will see most items require rep with the covenant to purchase. Just before launch, someone testing could summon a pet when they were with the covenant, but not when they switched. That is, the pet was still in their roster, but could be summoned only by a character with that covenant. OTOH, Ion did say that he didn’t think people who bought gear from a covenant should lose it when they switched. That sould seem unthinkable to me as well.
