I’ve started in new character just to level through and pick up extra transmog sets, Classic tailoring, Cata tailoring etc etc. tedious I know but I’m a bit of a collector.
I’m slowly getting through them but the crafted sets are not shown in the set tag at the Transmogrify NPC, anyone know why this is?

No idea why they don’t show there but at a guess it’s becuase crafted sets are not usuable by all characters. The sets displayed are all Tier/Ensemble/PvP sets etc, which every class/spec can obtain and use. Most also either come from or award an achievement.
Mainly because that function didn’t exist when the sets were introduced so they were never compiled into sets to show on the transmogriffier and doing so is possible but would take development time away from other things
you can use an addon, there’s some transmog addons out there which go back and list older matching gear as sets to pick from
