I did Sanctum of Domination on mythic difficulty few days ago on my paladin and I got multiple items from other classes, which are class restricted, into my collection. But this quiver is NOT adding to the collection. Why is that? Can I please get an answer? Thank you

As of now, class restricted items (such as the Dark Ranger’s Quiver) are intended to have the related appearance unlocked only if the looting character is of the same restricted class, this is however something the developers are going to change soon.

To summarize, in an upcoming patch (please note, as of now we have no ETA to share regarding when this patch will be available) players will be able to unlock transmogs for class restricted items even when using characters of a different class.
Quoting from the PTR patch notes linked above:
Non-cosmetic class restricted gear can now have its appearance collected by other classes. This change will be retroactive to any gear currently your bank or inventory.
Given the above, for now I would like to strongly recommend you to keep any class restricted items you want to unlock the related cosmetic of in your character bank or inventory; this will ensure that once the above mentioned patch is rolled out on live servers the transmogs will be unlocked for all your characters ^^
