So how does this work now?
If you unlock your class hall, Death Gate takes you to the Broken Isles, but if you opt to level a DK and not do Legion content, will Death Gate take you to the Eastern Plaguelands still?

Yes, on my leveled DK i currently go to the Broken Shore version, whilst on my Boosted DK i get ported to the Plaguelands

Yes this is the case.
I would like to have an option to change from Legion timeline to the original one and vice versa if you have unlocked the Class Hall. There could be a NPC in Acherus which can change the timeline, like we have those NPC characters in some zones already.

That would be too convenient for folks who want to get to the north part of the Eastern Kingdoms and aren’t Horde.
if u have unlocked stratholme pet battle dung you can teleport to the backdoor entrance of stratholme
It was that way about 8 years before Legion so it would not be anything new.
