Night fae is best for frost, But i really like necrolords.
Just wondering if i lose any thing like Sanctum upgrades, Stitchwork rep, Companions levels or any thing like that if i switch to Night fae and then switch back to Necro later
You won’t lose anything, but the Sanctum is separate for every covenant and so are the followers (except the generic ones like Meatball and Croman if I’m correct) - also, you can carry your anima over by buying items for it, swapping covenant and then selling it - this should come in handy 
No idea about Grateful Offerings though.

You don’t lose them. The only thing you lose out of the currencies is Anima - rest you keep.
You can move the stored anima a over to a new covenant by buying the items next to the fight master in Oribos
Do i still have the same anima if i switch back to necro?

It stays in your sanctum reservoir.
You can however by the items by the Oribos FP that take 1k from your reservoir and put it into a portable form. Get as many as you can, change covenant, cash them in. It’s lossless so you can move it over any time.
Can confirm all, and can most certainly confirm how annoying it is to click every 1k anima item with your right mouse button I bought covenent rewards 200k worth of anima from switching (had grateful offerings on this toon) and it was so annoying to click this over and over
You lose any mission of followers which is ongoing.
