Full sets are fine imo, you wanna look cool, transmog youself to look cool, sets or not. The thing about making your own transmog set is how it’s usually quite unique and innovative, making it more interesting and rare to see. At the end of the day, just make your char look how you like it to. As for competitions and stuff, again it’s harder to fit non-sets, it’s more unique and innovative so it’s more impressive when you get a sick looking self-made set. Just like any competition be it fashion or free styling sports, unique, good looking, self made stuff that you don’t see a lot, will be more impressive and gain higher score.
WoW lacks the ability to dye and too often (almost every time) the texture and style of the different sets is so different that even dyed correctly it would still look wrong. Meaning that sets will forever be the most cohesive option from transmogs.
Yea you can wear full sets if you like them, i used to farm a lot of tmog and mix sets when i started playing wow and was new to everything but now i just wear a full elite set from pvp or dreadnaught/redemption t3 sets, and sometimes even an older raid tier set if i think it looks cool, i have so much tmog (85% of all armor mog available for DK’s according to ATT) that i can’t be bothered to try to mix and match a random mog anymore but i still like collecting more of it
