I just assign every mount, besides the ghostly otter [bugs out in dynamic flight remaining grounded] and them fugly TBC mana rays, as Favorites so the favourites button becomes all RNG with hundreds to pick from.
Usually, I just have random mount on one of my mouse binds. Sometimes, I will give a character a specific ground mount, like my Death Knight will have Crimson charger bound instead.
Don’t really use mounts for events or occasions though no.
I use the random mount myself. I like seeing my collection cycle through.
I know some will match their mount to their mogs.
Shredder for farming, lucid nightmare for general use, gloomhoud for bragging, ashes for really bragging, and a wife when not playing.

Sometimes for transmog. I use TP fox because it looks like a ground mount if you don’t fly. And DF mount for passenger.
Like 10 mounts set to favourites. For some reason at the start of TWW only ground mounts were used inside of dungeons and I loved that so much. I wish it wasn’t reverted because it makes me want to unfavourite hippogryphs due to their running animation. If I could set that as an ingame option that’s what I would do.
I mostly favorite mounts that occupy less space.
I hate it when I want to fly into the building and the mount just hits the wall due to the size of the hit box.

I avoid huge mounts because they don’t fit in smaller entrances and picking herbs/ores is also more cumbersome with them.
My favorite mounts change over time. I used to use my curve mounts a lot, then I swapped to Tarecgosa, now I use the Magebound Spelltome a lot. I also tend to use the M+ mounts a lot when I freshly aquire them.
In PvP, I use a macro with all Vicious Sabres but even that got a bit old lately.
In the past, someone made a post about adding more favorite mounts buttons so people could make “favorite flying mounts,” “favorite ground mounts,” etc. I thought it was a fantastic idea and would like to see it in the game.
I have a main flying mount and a main ground mount.
What those mounts are can change depending on the character’s fantasy/aesthetic/transmog.
So for instance: My main (human) usually uses the Grand Gryphon.
This alt (Tah) uses the phoenix from MoP Remix.
My gnome alt uses the delve dirigble or air surfboard, depending on her current style.
Not sure things like that count as occasions though. 
I always use my trusty steed, the Prestigious War Steed. As for flying I prefer Obsidian Worldbreaker.
Flying - Ashes of Al’ar or Sandstone Drake
Ground - Llothien Prowler
Also have Grand Expedition Yak on my hotbar for vendoring/mogging

Just however I am feeling at the time
When I had room on my action bars, I had 4 or 5 mounts which I used per occasion (for example Elekk when grounded in general, Motorbike with seat when grounded and also taxi-ing a friend, Gryphon for general flying, Sandstone Drake when flying and taxi-ing a friend, and the Mammoth/Yak with the vendors). Now I just have those 4-5 mounts set as Favourite and let the Summon Fav Mount ability pick one.
Shift + R = Litemount Macro
Below that, I have three buttons: One for Mailbox Bruto, One for Old Bruto, and one for Tmog-mount.
I have put slight prio on Meeksi mounts over others in litemount, cause right now I really like those, but I also like a variation.
