As stated, Earthen with their racial can only eat gems, and those gems are hella expensive right now in the AH.
Why isn’t there at the vendor at the Inn you could buy a gem for health/mana regen?
This has to be fixed as a healer im disappointed I have no other way to get something to do mana regen, yes there is mage food, but that doesn’t help when you don’t have a mage in your group when Season 1 is around the corner.
There has already been a thread made about this. I’d recommend posting your feedback in that. Would be easier for the forum staff to just redirect a whole thread, instead of multiple.

Another thing that got past beta testing, somehow.
Look into Slumbering Soul Serum, it will be useful between pulls in M+. Not so viable in combat though.
Level 2 version: Use: Elevate your focus to restore 326,086 mana over 10 sec, but you are defenseless until your focus is broken.
