Relatively nooby here as not played since BFA.
To unlock Earthen, do I just need to do the story campaign and be level 80? I saw something else about Renown being level 4 but I am not even sure what renown is, how I get it and if it’s doable all at once or it will be time-gated?

Renown is the rebranded name for reputation. You get renown / reputation from doing quests etc. There should be a diamond shaped 
icon beside your minimap, clicking that will show your renown status with each faction
If you do the leveling campaign and a few side quests in every zone you should reach Renown 4 by the time you hit 80. You will need some side quests anyway since the campaign alone is not enough to get to max level.
