Escort quests are commonly the most despised quest type there is, you’re not alone in disliking them.

They are either too fast to run with or too slow to even walk with. Never do they just follow you!

escort quests, gather flowers quests, cook this, no thought in most of these quests it’s actually appalling considering it cost me £75…

What is boring to you, is fun to others. I did enjoy every escort mission, because it keeps me engaged with the story and I don’t have to restrain myself from mistakenly running away when dialogues start and continue.
That aside, most of the escort quests even offer a “sit and auto follow” group mount in the scripts. The entire Centaur Caravan thing can be absolved by just jumping on that one wolf that is part of the caravan and can be mounted by players as a Taxi.
You literally just have to listen to the dialogues. And if that doesn’t interests you, you can tab out of game and watch some youtube in that time if you like or similar.
