Thinking about leveling an alt after i’m done with this chara.
Which class out of three in the title do you think is most fun?
Also I have mining and herbalism on this demon hunter, which proffessions do
you think would be good for an alt?

i am maining prevoker this Xpac, and it is really fun IMO!
As professions i would say leatherworking if you decide to make an evoker so you can make armour for your Dh and the alt + skinning.
if you choose Priest of Wlock, i would say ench + tailoring
Deppends on what you want to do.
Evoker looks like it has to be played as healer to be viable currently (in M+), and I’ve mostly heard as DPS they’re clunky and squishy.
Priest can also switch between Healer and DPS, although they aren’t “meta” for M+ as dps, at least you have two heal specs to choose. They are also a bit more on the squishy side.
WL is pure dps, has three specs to choose (one should always be viable in raid / m+) and having a pet makes leveling / open world easy, so…
Moving on to your profession question… if you insist on making use of your gathering professions yourself, take alchemy / jewelcrafting to use the herbs / ore, but I’d heavily recommend you to just forgett about it in DF. You won’t be able to make full use of your own profession, because maxing them out has become nearly impossible in DF if you don’t have the support of a whole guild. Just farm mats yourself and have someone else craft your stuff on max rank.
I’d therefore recommend skinning and enchanting for your alt… yes, enchanting is also a profession, but you shouldn’t use it to craft your own stuff, but simply so you can make use of the “disenchant” function and collect mats you can give to a skilled enchanter to make your enchantments.
What do YOU think is the most fun? 
If you’re not playing Mage, Engineering is the best profession for any character. Dragonflight not withstanding. You can also support the alt with your mining on your main.
This really isn’t a caster-friendly expansion in terms of PvE or PvP, so make of that what you will.

I think i’ll probably play Evoker because he’s the new cool kid in town and probably a little
bit unfair like all new classes.
As for the professions,
I think i’ll go with Skinning and Enchanting to keep it simple.
Should have probably took Enchanting on Blood elf for the racial bonus and mining/herba on Dractyr for the same reason but oh well… To late now.

I would go with Warlock.
They look like fun, however: I really stick to my druid and hate alts so I have no idea what I’m talking about.
