I have my UI heavly customized but this bug has been following me now matter what I’ve changed.
I currently use ElvUI addon and there is an option to change the font of the floating combat text within that addon and no matter which font I chose the shadow is offset by quite abit and I have not been able to find a solution to this.
There was a similar topic created on the US forums in 2018 which didnt result in a solution, atleast not to my knowledge.
If anyone has any insight that would be really appreciated.

I don’t use ElvUI, but i do know that some of the scrolling combat text stuff cannot be changed by addons (or by you).
Wow has a SetShadowOffset function that can be used against FontInstances in order to control exactly the kind of stuff you’re talking about, but i think that is one of those things that is off limits for the build in scrolling combat text (if that sentence sounds like gibberish to you, don’t worry about it).
The font (which can be changed, as you know) does influence it as well, so you could either continue to experiment with other fonts until you find one that is better.
Or you could consider disabling the build-in the scrolling combat text, and instead using an addon. i think those generally create their own stuff (over which they then have full control). Parrot 2 comes to mind: https://www.curseforge.com/wow/addons/parrot2
