I’ve managed to remove the health bar that comes up in dungeons but the server name is right next to their player name. How can I remove the server next to their name so it’s just their player name?

I don’t think you can. Blizz limited the amount of customization addons can do to friendly nameplates inside instances, and the default UI has no setting to disable this.
All you have are
/console UnitNameGuildTitle 0
/console UnitNamePlayerGuild 0
/console UnitNamePlayerPVPTitle 0
Which are probably not what you’re looking for.
The reason why its not possible is simple. People will make scams and lot of them will act like each other to make some advantage…you will tell about your mate from m+25 to your friends…“He was hero with 10k Rio of our mythic and his name was Keysmasher123”
And next day you will play with Keysmasher123 with 500 Rio…
It doesnt even make a sense.
It’s just hiding it not completely removing it entirely from both parties for it to be susceptible to scams.
