I am looking for a DPS class both not easy to play and fun rotation
I mean fun and medium or high skill cap classes
Windwalker monk 
Though tbh, go Necrolord and our M+ AoE is basically 1 button. Getting good ST out of it is a bit of a masterwork however, and I for one have not managed it.

If you go full minmax and try to push the class to their fullest then most classes are pretty challenging to play actually. But if you really want to add another layer of difficulty over the already existing ones then you can always try any of the dot specs (affliction, shadow priest, boomkin) for that added complexity.
Demon hunter or fury warrior.
Yeah windwalker is really fun and different, it feels super good to get a flow going of hit combo and really timing your cooldowns properly
Kinda only dps i havnt tried is warlock. every class/spec is easy if u know how to play it.
It all comes down to do u know how to play or not.
Will u do research if u dont do well or not. i mean there is no hard classes in wow, if u know what to do and it makes sense to you.

I started playing outlaw rogue. Lots of stuff to track , its so fun to play
There are no fun classes. There are ok ones.
Rogue i would say.
If u take only rotation then its nothing extra hard .
But if u look at it as complex and wanna be above average with all the controls u have as rogue it can be quite challenging .
Talking about m+ and pvp mostly u cant use half of your kit in raid .
I tried WW monk for the first time and I must say it is pretty fun to play.
Since it’s melee it’s easier (for me) and the energy management is way more decent than rogue’s or feral druid’s.
You got some pretty nice passives too and the bursts are on point every time.
I personally can’t get bored of my ele shaman and I got bored of basically everything including my long time main - feral - so… I think I can really recommend the spec.
Agree - am levelling an ele shaman rn and do find it an interesting class / spec to play.
Shadow priest and affliction warlock - need to do is DoT and then consume insanity and soul shard,then AoE generating Instanities (I forgot a spell name) and for warlock is Seed of Corruption (AoE) and then for warlock is Drain Soul/shadow bolt
Single target warlock consuming shard is Malefic rupture or whatever name it is
Searing nightmare (AoE) consuming insanity
Devouring plague for 2/3 targets
Shadow priest really isnt hard at all
It got dumbed down quite a bit since bfa
