Can they get a visual update? I think gryphons are really cool, but the way their wings fold when grounded just looks silly.

Same problem with the wyverns. Many mount models never had any updated since early wow. I doubt this is a priority for Blizzard.
I know the old mounts still use the old models, but there are updated models for both which were added in Mists.
The horde one is called the Grand Wyvern, I assume the Gryphon has a similar name.

It has indeed, Grand Armored Gryphon.
However, I’d say the wings still look kinda wierd.
