Do you know of a tool that can be used to find out the number of characters in a guild on a specific date? Also, is it possible to find out how many times a raid was completed?
Not sure that can be tracked ingame, you’re going to need something like warcraft logs or something external for this.
/ginfo will tell you current status. It does not record any information from a previous time. Each character has a record in the armoury for each raid they complete in the current expansion.
