How can I create a simple “charges” tracking icon of my healthstones??? I’ve literally been looking for quite a while and can’t seem to figure out how. Is it a custom string I need for that? And if so what is it?

It shows more than healthstones, but if all you want is those, should be reasonably easy to extract only that from the pack.
