I am pretty new to the game and would like some advice from the vets.
I like to play healer and would love to hear your opinion on which class would be better holy priest or preservation evoker.
I would like to play M+ dungeons, raids and PvP well the end game.

you can gear evoker as aug super fast and will even invite with crap gear in good groups.
preservation is very triggering to play in pugs.
you range sucks and people tend to position themsselves always behind you are far outside so you cannot hit everyone with your heals.
it is also terrible at spot healing dps that standing in crap all day.
holy priest isnt bad for pugs but is not in a great position at the moment and has a bad imagine. although i dont have big trouble getting invited into 17s with ilvl 430 because of the healer shortage.
in short preservation is more stressful gameplay with a high base and high ceiling while holy is chill with a low base and low ceiling (complexity, not output)
Yeaa in pugs I find it very annoying when you get people just behind you or far away since my main 2 healing spells are close range basically.
Priest is easier imo is easier due to their ranged heals but damage I think is lacking.
Switched to Holy priest in S2 and didn’t feel like that at all 
Tbh any healer can perform well enough up to 20.
To answer OP’s question: if you played a healer in the first 5 years of wow Holy priest will feel very similar to that - I personally find that part of it’s charm. Other healers have more complex systems or resources like holy power, dps to heal, pre-hot etc.
I still reject the idea a healer should also have good dps. You’re there to heal, period. Sure when there’s loads of downtime you can spam some smites or whatever, but it should never ever make or break a run, in my opinion.
If you are new, pick priest.

Exactly yes
Holy priest has a tonne of optional buttons you can, or probably should take if you’re a more experienced player but you can get by doing maybe 90% of your healing with like 5 of them.
Does Evoker have a more tough time healing?
Evoker healing has positional requirements, you tend to launch your strongest heals directly infront of you which makes it a little awkward in unorganised / low skill level groups where players don’t understand they need to work with their healer for maximum effect.
Prevoker all day every day! Holy priest currently blows.
if you are a new player, dont listen to anyone suggesting preservation evoker, go holy priest end of story
like i said priest is good for pugs but it certainly on the weak side compare to all others.
at least hpriest now can do some dmg unlike rdruid lol
but in heavy aoe tyrannical fights hpriest gets much faster at the hps limits compare to others
itvalso kinda flops quite fast and has no external dr
