I too, wonder the same 
I think I can get an idea of the size of a Tauren by how large a real cow is if you see it up close.
I can easily see any adult Tauren being an at least 2m tall Juggernaut.
If there were any real stat variations between races, the Tauren would be having the highest strength by far.
Tauren males are 10 feet tall lore-wise, 8 for females. So males are over 3 meters tall.
Imagine getting punched by someone that big and muscular…

No, with 10ft height the Tauren are the largest playable race lore-wise.
Maybe all the players are the “runts”…
While the big beefy giant tauren are at the farm, working as breeding bulls.
