I haven’t played WoW since MoP and hunter even longer than that. How many pets should a BM hunter use generally? I’ve seen that you can have up to 5 pets or so but in some youtube clips in 2020 i’ve seen a lot of BM hunters go for only 1-2 pets. Can someone give some clarity on this?

You mainly want ferocity pets. All other pets are niche to useless.
The first pet in your stable will be your extra pet. It doesn’t matter what that is, as it gets no bonus from it’s unique skills. Or does it count as one of the pets you carry with you.
I’m going to preface this by saying i’m a SV main but I done some BM during the last patch.
I don’t actually bring SB with me. But they are probably the exception to the rule on Tenacity pets being useless, They are VERY handy in situations. I just prefer leech.
You are mainly bringing pets for what you need them for.
Bat/ray for a tranq.
Clefthoof is pretty much a direct upgrade to a scalehide for defence.
Though if you prefere to trigger Defensive CD manually you could go corehound.
Only difference is Clefthooves get more healing from your mend pet. And the corehounds defensive deals a lil damage.
You will probably want a pteradax or a waterstrider on your team when you’re going from A to B, since you get the bonus movement speed, and Pteradax has a slowfall, Water striders have a waterwalk. So it makes soloing old content slightly faster.
There are pets with slows/healing debuffs etc.
But those are the main pets you would really want to run with IMO.
I’d say fill your slots bar one, incase you happen to fly over a rare critter or two. There are 5 slots. So you SHOULD have enough for a Defensive CD, a slower, a Heal debuff, tranq AND a speedy one.
But again it all comes down to what it’s needed for. I suppose I rambled on enough so I’ll try an answer in a tl;dr
TL;DR
Most pets are useless, and there are only a few that are actually worth bringing to anything. Depending on the content you wish to partake.
It’s not the pet’s fault.
They just got the short end of the stick when they removed your ability to change there specs.

i like manasabors it is funn to remove buffs and bubbles with it in BGs
even more fun when when u have trinket what makes up to 14 copyes of it .
For what content?
For pve? You want a spirit beast and a bat/ray. All have a dispel, the bat/ray has BL for when your group lacks it (the SB brings a def. CD + the heal)
For PvP, you want something like a silithid with its slow and a raptor/hyena/rodent for their grievous wound debuff.
then for levelling or general questing, you want a clefthoof.
