It depends. As I wrote in my post, I played mage and warlock because of aesthetics. It didn’t work very well in the long run. It did motivate me at first, but if the play style is not really something I enjoy, no cool transmog will make me have more fun.

I had exactly the same problem for a year until I decided on this DH. I really like her abilities. I find the rotation easy to play.
And try to tule out some classes:
For example I don’t like constantly collecting and spending combo points on a rogue
I don’t like the lack of defensives of a hunter
I don’t like the fantasy of warlocks
I don’t like how the monks use their fists instead of their weapons
Warriors are great but I prefer having a magic spell or two
DKs are cool but I can’t seem to play them correctly
I don’t like when druids are shapeshifted and look like every other druid out there.
So I successfully narrowed my preferred classes to only 6.
I hope to decide between mage and priest and narrow them down to 5.
My evoker is still in the starting zone so 4.
When your class is not at the top of the meters for a patch or two you can do non-competitive content. You mentioned Loremaster and then your professions, mounts, transmogs, reputations etc.
You said you like playing as a tank. Not all classes can be tanks so that should help you narrow down the list of your preferred classes.
More and more progress will be account wide so you can easily play few alts. Catching up on gear had never been easier.
Just go full YOLO and if you dont like it, change the character
Leveling is super fast, as is gearing at max level
If i’m not mistken, TWW’s warband system doesn’t really require a main. You can have a character do X thing, while the other does Y. There’s no need for an actual “Main”! Just play what you feel like playing!

Mage and evoker are pretty good choices for a class in need if you do pugs. Unfortunately, you most likely will never get invite nor people join your group if you are unwanted DPS class
I only chose this for the forum because of the character’s name
I haven’t even decided on TWW main Mage,hunter or monk.
Arcane mage feels amazing to play on the beta atm, could not recommend it enough

But I like this in mage, if I get bored I can change one spec to another (I know it with hunter as well).
It depends on the type of content you want to do. If you raid or do M+, you’ll probably want a main that you focus on to keep up. There’s no catch-up for the weekly vault, and item level requirements steadily increase if you want (or need) to play with random people. You can always eventually catch up, but you’ll somewhat trail behind progression-wise if you switch in a season (less of a problem if you have friends who can help with boosts and gear farming).
