Well I mean legally, imagine you rent an appartment for a year and all of the sudden 3 months in, you are forced to sign a contract, or else you can’t enter. I’m not sure, but I would think that you should be able to just bail regardless of what they said in their t.o.s., but I could be wrong, cuz I’m not a lawyer.

Nope. There is not a word of any “Social Contract” in EULA. Additionally, this is EU. If any entry in the regulations has changed and their must be accepted to utilize the service, user can cease such an agreement.
In most European countries, the act of renting an apartment without signing a contract first is illegal mostly because the primary reason a landlord would want to not have a contract is tax evasion.
