I would probably say warlock, DH and holy paladin are the easiest, but followed very closely by fire mage, rogue and mistweaver
Wait for extreme rating inflation in like september then you get rating in no time with right corruptions 
It does not matter when you get your mount if first month of season or last point is you have it.
Demon Hunter no doubt. Rest of the classes does actually have some sort of rotation while DH presses 1-2
